Actually, it is "stine" not "steen". In German, the long vowel sound of the second letter in an "ei" or "ie" combination is pronounced.

LOL!  I believe it was a reference to a scene from Young Frankenstein. A classic!

Yes. He was intentionally mis-pronouncing his name because he did not want to be associated with the ancestors.😬
