Well guy's, it's winter up here in Oregon.

Just got over nearly 4" of snow and ice and got two more fronts comin' in, over the next week or so, and the weatherman say's it'll be a "WHITE CHRISTMAS", and I had all the ingrediants and like to cook, so seemed like the thing to do.

House smells really great.

All us guy's like to eat, so I thought I'd post a little somethin' different here, to go along with "Old man Winter".

Got three to four pounds of chicken thighs cookin right now in a big dutch oven with about 4 quarts of water, some butter, some chicken boullion, fresh cut up onions, some fresh basil, and plenty of pepper.

Grew up on spicy mexican food in SoCal in the 50's and 60's, so everything has to have a "BITE" to it. Even my homemade spagetti sauce has jalapina's and other spices. EEEHAH, man is it good. Makes ya sweat when ya eat it :lol: Had a girlfriend who's mama made the best homemade enchiladas :)

Next cut up some fresh celery and carrots.

After the chicken cooks about an hour, I de-bone it, and add the "Veggies" and cook about another hour on simmer. Taste and add a little more pepper :D .

Near the end I cook up a big batch of noodles seperately for 10 minutes, and then combine everything.

Make about 6 or 7 quartz.

I get out my freezer containers and divide it into smaller batches for meals, and "good to go"

Um um, cain't wait. Big 'ol chunks of chicken steamin' hot in a juicy broth, while your builden' models, and then a NAP - UM UM !! :P

Timer just went off for de-boning the chicken, and it's done. GOTTA GO ;)

Notice my cat "BAXTER" - THE BAXY-BRAT, he likes chicken too - LOL

I added a little "Tobasco" after all the ingrediants were blended for more flavor and a little "KICK", and OH MY GOSH IS THAT GOOD.

Not too hot - JUST RIGHT - YUM!!

here i was looking at the pics and thinking the cat was part of the recipe, the "secret" ingredient! i love cooking too, but i'm no chef, not by a long shot.

anyone for Portuguese Caldo Verde or some Carne de porco a' alentejana? i'm not half bad at making either one and i'm not Portuguese!

Great thread and recipe! I went to culinary school and retired after 30 years, the re-occurring nightmares are almost gone! Still cook daily for the family, though!

You're making me hungry! That recipe sounds great... actually pretty close to how I do it too! B)

BTW... you guys in Oregon got 4" of snow? That's a lot for you, I guess.

Forecast here in northern Illinois tonight: 10-12" of snow overnight. Even more closer to the Wisconsin border... and then more expected on Saturday! B)

Yeah Harry, that area always gets hammered around Chicago and Detroit around George53's area. We're expecting 6 to 10 inches here Sat. night and Sun. morning. That's a lot for us.

We've become more of a rain area for the winter the last 25 years or so, but seems like at least this year, we're returning to more of the snow and ice which most of us missed and really love.

I still like snow ball fights :lol:

By the way, the chicken noodle soup last night with hot home made bread with melty butter - YUM!! :lol:

You're making me hungry Dave! I live in the Portuguese Capital city in USA(unofficially) (Were full of Portuguese, in New Bedford and Fall River) Being 3/4ths Portuguese on both sides of my family, Kale soup was a big part of my family growing up, I LOVE IT!

Hey! Soup-making is one of my favorite winter-time activities. (We're smack-dab in the middle of a dangerous ice storm right now and there's nothing moving outside). I recently cooked up a pot of Cock-a-leekie soup (chicken/beef/leeks/barley in a my homemade chicken stock); perfect for weather like this! Eat it piping hot with a hunk of homemade wheat bread. . .yum!
