Nice build John. I remember guys runnin' without hoods when i was in high school, early sixties in Tucson. Stray, with so many reissues of that kit still available I'd keep it as is ( a piece of history) and not build it.
Body holder / parts holder. Made from, coat hanger / welding rod, put into appropriate sized holes drilled into 2X4 close pins sanded down to pointy shapes are good too.
Sorry, the picture just disckappeared. It was a VW with an old HEMI stretched valve cover for a dash. Kind of unique, done well.
