The easiest way to get started is with the help of your trusty freezer. Grab the model and, a plastic ziplock bag large enough to hold the model. Run the model under water and, place it in the bag. Place the bag in the freezer over night. The freezing water will start to losen everything up. In the morning take the model out and, pull off what is already loosened. you may need to do this a few times.

I use a knife to gently pry things apart, after a stint in the freezer as Kris mentions. There's nothing that dissolves old styrene glue, but the freezer makes it brittle. The glue basically melts and welds the plastic. The less glue used in the original build, the easier it is to get apart. Sometimes this all just doesn't work and I have some plastic repair to do.
