What are the differences between using the T Bird chassis that comes in kits like the Elliot T Bird and the GM chassis that would come from say Oldsmobiles of a similar era?  Front suspension? Front or rear steer?

GM stuff is front steer. Engine cage is way different too

Rear steer all the way in the seventies with the exception of Bobby Allison built cars. They had short arm 3 link rear suspension too. The Laughlin chassis came out in the early eighties. Beyond that my knowledge is nill. Once the G Body cars went away so did my interest in the sport.

Agreed on that. "corporate" cars are a lot like other corporate things. Terminally boring. I knew Allison used different rear but did not know about the front.
