  For those of you who have made a dip stick for your engines,   can you give any advice on how it is done, what materials to use ,etc.

I'd just use an appropriate gauge of wire, like bread tie wire for example, curl the end around a pin then dip in paint, maybe a couple of times if you want some girth to it. Drill hole in block. Install!

I usually use a piece of plastic rod bent to the shape I need for the tube, and then fudge together a dip stick, usually from a small piece of plastic rod drilled for a loop shaped piece of wire.

I continue to experiment with dip sticks.
