Most pinstriping tape is on the thick side.  For masking, you want thin tape.

When thick tape is used, the second color builds up against the thickness of the tape itself, causing the rough edges you see after it is removed.

Have been concerned that it would stick to well and be difficult to remove

I haven't had an issue with removing it from the plastic. and the lines come out crisp and smooth. Haven't had any issues  with paint build up either..

When I worked with my dad in his body shop. There was pinstriping masking tape. He would lay down the masking tape and then pull out the pre-cut center. Then he would paint the pinstripe.
