Do they make a plastic coated wire that could be used for bending roll cages/bars into shape when trying to make a roll cage ?

A lot of builders use plastic tube and insert brass rod the same as the opening of the tube. You can bend it and it won't collapse.

Being a welder, I grabbed a few sticks of .050-.060 aluminum tig rod to use as a mockup and get angles correct.  I could probably epoxy that together and save some work. It's dead soft and bends super easy. Just another option for you.

I have gone that route also. You can get it pretty cheap at Harbor Freight

Agreed. This is the method I use the most. It's pretty straightforward and everything glues together with plastic cement. There is also a wide variety of styrene tubing to choose from, so finding the diameter you need is easy.

Another option is florists wire. I've used this a few times to make rocker guards & grille guards on 4x4 models, the 8 gauge is 3mm. It's a plastic coated wire that takes tight bends well and holds its shape. I attach it with super glue.
