Yep. Excel is the simplest thing to use. I track all my kits, and certain paints and aftermarket, using it. A long time ago, I downloaded a sheet off the net for this, but long ago figured out that it's easier to just make my own, since I can adjust everything to fit my own needs.

De nargas, man. Scalemates is great for its kit and AM database. One could look up virtually any kit or modeling product in existence. Almost. :)

Excel or Quattro Pro (Word Perfect's spreadsheet) or the Open Office Calc all work well for this type of application.

Setting the spreadsheet up is not that difficult. 

Column headers below:

Manufacturer     Model     Mfr. #     Qty. on-hand     Notes

 

Very easy. Takes two minutes to set up and re-size the columns, and as long as you need to enter data.

An inventory is only as good as you keeping it up to date!  I failed miserably in that area.  Maybe 5-6 years ago I wanted to learn Microsoft Access, so I tooled up a model car inventory program.  I got about 1000 pieces into it, and then never looked back. If I was to do something today, I'd want to have access to it on my iphone.  After all, I'm most likely to need to know if I have something at a show or club meeting.

I keep track of my old built ups with a photograph folder on Fotki.  A few quick photos and it's much easier than trying to describe them.
