American Cheese. Townhouse Crackers. Campfire Chicken Lunch Meat. Mountain Dew. Apple Sauce Fruitcups.

 

Somedays, I'm just too tired to think, and I just graze. Wife is laid up with a Bum knee for the rest of the week, so it's simple meals until Saturday.

I like pineapple on pizza too. It has to be jalapeño or sweet and spicy spam for me.

Never had jalapeno Spam, but there was a recipe we found in the newspaper when we visited Hawaii that is similar. You grill the Spam and fresh pineapple slices. Put the pineapple on the Spam and melt Kraft American cheese over them. Serve on King's Hawaiian rolls. They make slider rolls now that are perfect for this.

My girlfriend came over yesterday, she knows that I was jonesing for fried chicken, mashed potatoes and homemade cowboy gravy.

She brings deli supermarket fried chicken that is pretty good. Fake mashed potatoes, which are not bad.

I ran into a recipe on IG for what was called cowboy gravy.

Start with a sauce pan and 1 stick of butter. Get that melted, stir in 3/4 cup of flour to make a roux. Add 2 cups of chicken broth, some extra is good if it gets too thick. Keep that moving until it this out. The recipe calls for 2 tsp of each: salt, pepper and seasoning of choice. 

I went easy on the salt, 1 tsp of pepper would have been fine. It did come out well and I have some leftover. I will have it over cornbread with my eggs later on.

Arby's makes pretty decent Greek-style gyros (if you're not too hung up on absolute authenticity) and I like their curly fries.

But they're a much better deal with coupons. 2 meals for under 10 bucks, and dinner was just what I wanted tonight.

As usual, I had a cheap but decent full-bodied red wine, and fresh strawberries for dessert.

While I fully appreciate "haute cuisine" and am a pretty fair cook myself, I can also enjoy well turned out fast food.

Bill, Arby's has a brisket sandwich I'm sure you're aware of......... They put fried onion rings and BBQ sauce on them! They're quite good......

Tonight I had chili I made Wednesday on some tater tots.......

I have a Jones for an Olive Garden visit soon. They have that good unlimited salad, the entrees are not bad. We can walk out for under $100.

They also offer frozen entrees to go for $6 each, the limit is 5. They are frozen, so right into the freezer at home.

I still need to make real fried chicken sooner than later.

The last time I had dumplings was over 55 years ago. My grandma made them over a pot of stew. From what I've read, they are easy to make.

Grandma was delicious, and preparing and cooking her here at home spared her the indignity of being processed into Soylent Green, plus we kept all that nutrition in the family.

I think this may be the wave of the future, having the deceased as the main course of the wake feast.

we used frozen biscuits and rotisserie chicken from costco

If you have an Instant Pot or similar, this is really easy. Probably not as good as Grandma's, but decent.

Last night's dinner was Cajun spiced chicken drums, (far too spicy 🥵) red beans and rice with cucumber slices on the side.
