I am admittingly obsessed with detail and I am looking for someone who makes the fan belt/pulleys with a power steering pump. Why is all models lack a P/S pump? Does anyone know of a resin/3D printer that makes a belt system with a P/S pump?

Specifically looking for the round Ford P/S pumps from the '60s & '70s

The Revell 70 Torino kits have the power steering pump I believe you're looking for. I do agree that there is an opportunity for someone to make better accessories than are available now.

FYI. Here is a screenshot of the instructions for a Revell ‘76 Torino (from spot model) and a pic I found of the ‘70 Torino engine.

Ford had two different power steering pumps in the 60's, the earlier up to 1965ish Eaton pump with external reservoir either on top of the pump itself or remote mounted on the inner fender. and the later  from 1965ish Ford pump with integral reservoir like the one in the pictures above.
