I have been looking at Google images, I want to decide what wheels would be right for a Cali Pete 359 used as a log truck in the late 70's-mid 80's. All the pictures I find show Aluminum wheels, 5 hole steels, or 5 holes with a trim disk.

I can find none with Spokes/Daytons. Did they ever have them?

Well, I guess it kind of depends.  Peterbilts could be ordered with spokes, but the were more popular on the East Coast (and Canada, I believe) than to the West Coast.  So, spokes could be ordered, but they were rare.

IMO, the only wheels that look right on an older west coast log truck are Motor Wheel Corporation's "Centruelight".

Like Jim said spokes were available but pretty rare. You'll find more with spoke drives with disk steers than you will find full spoke. Tim ("Mackinac359") on Fotki has some pictures of 359s with full spokes.

Also like has been said, disk for the west coast truck would be the most common and accurate.

Just because it's less common doesn't mean it's wrong, they could be ordered with a full set of spokes and different buyers liked different options. Also, if you're building an old truck as it is today it could have been spec'd for an entirely different job or in a vastly different place than it currently is. I built an east coast log truck with full spokes because I liked the look if it.
