The AMT '67 Mustang has a nice 1/25 version, and you can create a good 1/24 version using parts from the Monogram '65 Mustang and '66 GT350 kits.

I like the Revellogram mentioned above.  Its 1/24 scale but I have used it in several 1/25 scale builds.

Both engines mentioned above are good, but if you're going for a factory stock HiPo, the AMT '67 Shelby  GT-350 Mustang is probably better - it has the correct intake and exhaust manifolds and air cleaner.
