Fujimi does a Pantera with a nice stock body and nice tires/wheels, but zero engine and chassis detail. The interior is weak and has non-stock seats and steering wheel. It may have originally been designed as one of those motorised kits. The worst part of the kit is the glass has seriously bad optical distortion. It's weirdly designed, very thick at the edges and thin in the middle. The windshield doesn't have much curve though, so not too difficult to make a replacement from clear sheet. It has a great looking body, and makes a fine shelf model if the glass is replaced. 
 

Gunze Sangyo does a good looking Pantera also, equally simple as the Fujimi kit, and also an old motorised kit . This one has the wide flares and air dam of the race cars. 

Not sure what other options are out there, but in 1/24 scale, I think these are the primary choices.

FYI and for what it's worth, both those kits have scaling and line/proportion errors that aren't huge, but might bother folks who are extremely familiar with the cars, or who just have finely calibrated eyeballs.

There's another Pantera tooling out there that seems to have gotten around a bit. I've seen it in Nichimo, Imai, and Airfix boxes. It has the race fender flares and a squarish front air dam and is an old motorized kit too.

For anyone wanting to do a full-detail build, the vast majority of Panteras were built and delivered with the Ford Cleveland 351, sporting a single 4-bbl carb and rather simple headers that terminate in oval mufflers with two chrome tips each. The air cleaner housing was usually straight off an American sedan with the 351C as well.

The gearbox was a 5-speed ZF unit. There have been several in 1/24 available from the resin aftermarket, and there's one in 1/25 scale in the Revell Shelby Series 1.

There have been a number of hot-rod Panteras built over the years, a few back-halfed with tube frames, and some with various superchargers, single and twin turbos, 302 and 351W swaps, and even an LS or hemi powerplant or two.

The Roadster Shop even built an entirely redesigned frame that was intended to fix some of the chassis-flex issues inherent in the production cars.

Have to agree those front and rear fenders are hideous.  Looks like it is next to some nice cars too.  I have seen a good amount of stock and tastefully modified Panteras in South Florida.

Close to 20 years ago I purchased a Pantera Testors 1/18 diecast kit that had to be assembled in Portland Maine at Kaybee Toys. At the same time I also purchased  a Testors Plymouth Prowler 1/18 diecast kit, which also had to be assembled. I still have both on my shelf.
