My Mom does something similar, but instead of onions and sauerkraut she cooks them in a tomato/soup mixture after browning them......

That sounds good. I would imagine an onion soup mix would add awesome flavor.

My girlfriend picked up a bag of little peppers for me, actually a big bag. I'm planning on making sausage and peppers possibly later today. A big batch, I can freeze the excess and there will be excess.

Our Father's Day dinner this past Sunday.

Started with a nice Ceprese Salad.

Then a delicious sandwich of grilled French Bread, Grilled Chicken, Bacon, Red Onion, Leaf Lettuce, and a wonderful homemade Tomato and Harissa Jam!!

Everybody has been sick with Covid.

Been eating whatever we can find, as nobody wants to cook.

At least we did the Big Grocery Shopping the day before we got sick, so the pantry is full.

Had take-out pizza tonight, to try to tempt the 5 year old to eat.

(He did eat one slice)

Pinto beans , chicken thighs baked in rice-a-roni , fresh corn on the cob and corn bread .

stuffed like a tick . ?

I will have to try that. I find it tough to cook for just me most of the time. Goya makes some great rice sides that everyone likes. I often buy the 3-pack of the yellow rice, serve it with red, pink or black beans.

Having a little fun with some foods we had never tried before.
Burrata cheese with grilled bread and Sopressata, and crab stuffed Branzino with a salad.

Beef tongue.

Bought a whole beef tongue- about 4.5 pounds. Steamed it for about 4 hours. At that point peeling it required zero effort. Then sliced it thick and sautéed it in browned butter and sprinkled it with paprika, cayenne pepper and sea salt. With homemade garlic knots and home baked baguette to dip in the extra butter. Paired with Wild Turkey Rare Breed Rye. At 112.2 proof, that thing will put some hair on your chest.

I’d probably have to get a little drunk to eat beef tongue too! ?

I made a pot of chili yesterday. Worked on the car outside until it got too hot in full sun. I had a few big jalapenos to pick in the patio pots. I used a pound of Botto brand hot sausage (out of the casings), a pound of boneless chicken thighs (seasoned and grilled) chopped up. The usual biggest yellow onion and green pepper I could find, a whole bulb of garlic, cilantro, celery, spices, Better Than Boullion (turkey flavor), a 1/2 can of beer and crushed tomatoes. Goya Sazon, 2 packets.

It came out good... also a habanero pepper I had vacuum sealed from the freezer. I added some cayenne to it. It has a decent kick, but not rude.

It is actually some of the best steak you can ever have. When it is sliced up and served it looks just like that. I mean, after all it's just a muscle, likr any other steak. Just a lot more tender. I love the reactions of some people I have cooked it for. You cook it, you dress it you serve it and people ask what are we going to eat. And you tell them it's beef. They try it and without a fail praise it every time, telling me how it is the best beef they ever had. And then I tell them what part of the cow it came from and it is just crazy to see the reactions. All of a sudden they are not sure they like the texture. It smells kinda a different etc.. In reality its all in their head. We had good friends over one time and I made it for them. Same story. Once I told them, the husband was cool, but his wife looked at me and asked: "You wanna tell me I just made out with a cow?" We died laughing.

A few years ago I attended a charity fundraiser that served catered Mexican food. I ordered the lengua tacos, and the caterer (Latina) looked at me (white guy) and asked if I knew what it was. I answered, "Yes, beef tongue." She seemed relieved, and made my plate. I must admit that I haven't had them since, but I would definitely eat them again if they were on the menu.

(Not my actual tacos)

Way back in high school a guy had a beef tongue sandwich and we all laughed and from then on his nickname was beef tongue, of course. I had never heard or thought about it up to that point. I've seen it in the meat section at the store and it doesn't look like something I'd want to buy.

You guys have educated me a bit on it but still prefer eating the usual parts I've had all these years.

Imagine being the first guy who ate a lobster.

All his buds looked at it and said "ewwwwwwwww...yuck...giant sea bug".

And he smiled and said "cool; more for me."  :)

Many years ago I went to dinner at a Hispanic co-worker's home. Menudo was served (cow stomach...tripe...soup). They all kinda wondered how I'd take to it. Having had tripe-based soups from several other cultures, I recognized exactly what it was and liked it just fine. Honestly I'm not wild about the texture, but once you get past what part of the cow it is, it's pretty tasty.    B)

Oy mate. Ya kin buy beef tongue in the deli, already prepped. Pretty mainstream as edibles go.

Witchetty grubs on the other hand...

In all honesty, I have eaten beef tongue, albeit many years ago,  and to be honest, I thought the flavor leaned much more towards liver than “beef”.

Not that that is a bad thing.

I love liver!! ?

Nothing has to be odder than tripe or snails. The stepmother used to cook up tripe... no thanks.

I've had snails too.

They're okay.

Something akin to a clam.

It's starting to get a little chilly and it's sposed to rain all weekend, so I made the season's first big pot of chili.

2.5 pounds of cubed pork roast, onions, lotsa garlic, a couple potatoes (yes, I sometimes put potatoes in chili), no beans (except refried black beans to thicken and color the sauce), heavy on the habaneros, hot tortillas, & a rough red wine.

Sweet-hot meaty nuclear heaven.  B)
