Fish tacos from Fishetarian http://www.fishetarianfishmarket.com/

Some fancy overpriced tortilla chips with guacamole and salsa made by my friend Jennifer.

Wine. More wine.

Enjoyed with this view from the house we are renting.

Homemade strawberry ice cream to come, then hot tub before sleep.

11 oz. box of blueberries. Eat 'em like candy. Filling, sweet/tart, only 180 calories, and they're really good fer ya.

https://pmc.ncbi.nlm.nih.gov/articles/PMC7442370/.

EXCERPT:

"An increasing body of evidence suggests that blueberries and anthocyanins reduce biomarkers and risk of diseases that constitute major socioeconomic burdens, including cardiovascular disease (CVD), type 2 diabetes mellitus (T2DM), and neurological decline. In these observational analyses, anthocyanins often provide benefits over and above other plant food phytochemicals, including other flavonoids (2–6). The intake of even moderate amounts of blueberries (approximately one-third cup) and anthocyanins (<50 mg) daily is associated with disease risk reduction (2–4, 6–9)."

Surf and turf with shrimp and a filet. Nice bruschetta appetizer. Wine. Bread.

Spousal unit had the two lobster tails. Guest of honor was the best neighbor ever for 32 years now to celebrate her 77th birthday. She had the salmon that looked interesting. It was all very expensive, but you have to celebrate the people you are close to because we won't be here forever.

On the subject of blueberries......I don't like them. Never have. I like all berries except those.

My wife loves them and gives the dogs a few every morning. I know most people like them and are always making things with blueberries in them so I'm the oddball I guess.

You’re not an oddball.

I’m with you.

Never been fond of blueberries, but I love most every other berry.

My wife loves them too.

I agree!

Which is why I spent the afternoon on Sunday making a big batch of meatballs and red sauce for  my daughter and her family, and my son and his fiancé.

Of course we had to sample it to be sure that it was safe. 😉

We had frozen pizza. Saw something either online or on the news saying that a certain brand of frozen pizza (Screaming Sicilian) was the best ever. The article went on and on about how good this pizza was. Normally I’m not a fan of frozen pizza. Our local Walmart carries Screaming Sicilian so I picked up a pepperoni and a meat lovers (my word).
I have to say, for frozen pizza it was really good. The sauce and meats were really good. For frozen, the crust was good, but could have been better.  Verdict, I’ll get it again if I want frozen pizza. It was good.

I love cheese pizza! Our little towns Walmart doesn’t carry it. Next time we go the big city, I’ll check there. I live one a geographical anomaly. We are 40 miles, in any direction, from a big city. Seriously, 40 miles.

I went old school, fried tators and beans with pork ribs .. no ham or salt pork.

That actually sounds good! How did you cook the ribs?

I cheated when I did it, but here's how:

I rinsed my beans, and then added a whole diced onion, table spoon fresh diced garlic, salt, pepper. Took the ribs out of the package cut them to where it was 3-4 bones per chunk. (Spare ribs is what I had on hand.) Covered beans in about 2" water.  Tossed the ribs in, gave it a quick stir.

Pressure cooked in the Instapot 40 minutes.  Dropped the steam using the valve. Opened, at this point the ribs were cooked so I pulled the bones. Shredded the meat and all the fat into the beans. Put it on simmer while I fried the tators for another 10-15 or so, stirring and adding seasoning as needed.

The ribs give a nice pork flavor, and thickens the beans up nicely too.

I have done this same recipe with ribs I have smoked too.  Just have to mind the char from smoking/grilling.
