Please see below the build plan for the engine options. On the right it shows a complete stock engine, on the right it shows the Optional engine build, but it looks incomplete! What can't I see? I can't see injectors, carbs etc.

You'd have to research the R-5 version of the Studebaker engine to see if that option in the kit is accurate.  Only a couple of them were built, none were sold to the public that I'm aware of.

The detail on the kits parts is probably a bit soft, but looking at the excellent reference photos posted by Gerry, most of it appears to be there. The part #510 (fuel meter) appears to be a throttle body style fuel injection assembly. The throttle linkage/cable and fuel lines would attach to that. The kit seems to omit any kind of galley cover for the top of the engine block, so the nibs on top (for locating the stock intake manifold) may have to be removed.

IIRC, that Fuel Meter/Throttle Body was an Aircraft Unit, possibly Bendix, but has been years since I read the article about the engine.

Depending on who you read, anywhere from 500 to 600.  They were not built for street but for racing.  Available details have been sketchy in the research I did a few years back.  In planning for Avanti build I decided to go for an LS or LT engine and add an IRS to it as well as front end improvements.

Well thanks guys for your help. Particularly Gerry showing those great pictures, now I can see how it all goes together! I'll have to bring the engine from my garden cabin into the office to build it up, many, many thanks.
