I wanted to make General Tso chicken but I didn't have the sauce to do that, so I just invented my own version. I had chicken in my freezer that had been there a long time and I needed to use it up. I looked through my unorganized kitchen cupboards, found an old bottle of pure honey that had crystalized and I soaked it in hot water and it became liquid again. I mixed that into some blackberry jam while the chicken was frying on the stove.

I threw in bits of veggies, chopped the cooked chicken into pieces and boiled some rice then I wondered what it would all taste like. Nothing ventured, nothing gained. You're supposed to bread General Tso chicken but I didn't bother because I didn't have anything on hand to do that anyway.

As I told both my sons, the best recipes were made when someone experimented.  My soon to be college graduate can cook and the teenager is just starting to get into it

I agree. When I was growing up, I recall my mother made hamburger helper before Betty Crocker ever did and pork helper and chicken helper, too.  I watched with fascination when my mother cooked, she just seemed to throw stuff in pots and pans and sometimes would say "I wonder how this will turn out". When my father was off work a few times due to illness or a labor strike, mom would do meals that were creative and call it "making do".

Frankly, we kids didn't notice when money was tight as far as meals were concerned. If my mom ever used a cook book, I wasn't aware of it.

Last night I made some Giambotta, which is an Italian stew in brown sauce.

It has chunks of chicken and sausage, onion, peppers and tiny little potatoes quartered.

Im sitting here after working in my garage all day finishing up the leftovers.

Oh I love that, my mother used to make great food like that.

Dinner tonight was an Arby's reuben sandwich with an order of onion rings and an order of their curly fries, at the drive through window and I came home and enjoyed it with beer to drink. For a fast food place, their reuben is surprisingly good.

With summer coming to a close, I decided that I would use the smoker for the last time this season before I put it away for the winter.

Threw on a rack of ribs, and was rewarded with some of the best ribs I've had in a long time!

Now I'm fighting off the "pork coma"! :D

It's kinda coldish here for the end of March, so I made a pot of sweet-hot Middle Eastern-inspired potato, tomato, apple, and bean stew.

Had to use up the last of the fall apples, and a big potato that wanted planting more than eating.

Kinda like chili, but not. Heavy with cinnamon, cardamom, turmeric, and nutmeg.

Coconut-ginger basmati rice and hot butter-smeared pita bread for accompaniment.

Washed down with a cheap but remarkably decent California Merlot.

Excellent.    B)

Half a chicken cutlet and broccoli rabe hoagie with provolone cheese from Tallutos  an Italian store near me. I had the other half for lunch. Yum!

3/4 pound medium-rare burger on toasted artisan Pumpernickel with melted blue and sharp cheddar cheeses, lotsa rich mayo, coarse-ground brown mustard, slabs of beefsteak tomatoes and diced jalapenos...crusty-pan-fried in minced garlic, cracked pepper, and onions.

Big glass of a hearty California burgundy.

Fresh blackberries in sour cream for dessert, and strong coffee with whipping cream.

Man, this geezer can cook.     B)

Yep!

Mom never smoked, drank, drugs, stayed active and worked up to the day of her stroke....long trips for her were anything over 20 miles one way......died at 70 of a stroke from not taking her blood pressure meds

Dad ate like the cockroach, smoked a pipe, never exercised and stopped taking his blood pressure meds after mom passed.....made it eight more years to the age of 80 and died of Dementia.

I'm mid 50's and buried several friends and classmates. I'm fat and happy.  BP under control and bad cholesterol is only marginally high

Couple days back I had a fat slice of cherry pie for dinner, then about a third of a pack of generic Oreos for dessert...with milk, naturally.

I almost always eat healthy and get lotsa exercise, but once or twice a year I indulge the 5-year-old-me still lurking inside. Keeps him quiet the rest of the time.  ;)

Sounds like me 'til I hit about 45. Figured if I wanted to make 50, a few things had to change.

25+ years later, the revised dietary strategy seems to be working well enough.   B)

Went up for a visit to the mom’s house yesterday. Stepdad made stuffed pork tenderloin wrapped in bacon. His cooking is always a good incentive to visit. Night before that the wife made enchiladas and mexican rice. I’m gonna have to slow my roll or I’ll be full for the next week :D
