Yup, I'll often use "day old coffee", a trick I learned from none other than Carroll Shelby. Coarse cornmeal for thickening too, with an extra flavor note.

Far as chocolate goes, I sometimes use semi-sweet or dark "morsels"...and eat more straight from the bag.  :D

I did, but I made a double batch, so I can use it for all sorts of stuff.

I cannot eat Red Sauce anymore. Especially the spicier, authentic versions. Heartburn so bad nothing helps, but drinking a half gallon of milk. I've given up on almost all Italian food.

Your Red Sauce looks great , Steve. Wish my burnt out digestive system could handle it.

Dinner Tonite? Cheese and Crackers, and Vienna Sausage. Washed down with Eggnog.

Kinda challenging cooking a mostly scratch traditional Thanksgiving dinner-for-one on nothing but a single large propane burner and one toaster oven, but I pulled it off pretty well. Not the best t-day I've ever done, but much better than anything I could have bought prepared or delivered.

Also much easier last year with two toaster ovens and a microwave, but as the house in AZ has a nicely equipped kitchen, it didn't make much sense to replace stuff (that I've essentially been camping with in this place) when it died.

Leftovers of taters, stuffing, gravy, and punkin pie to get me through Sunday, and enough turkey for sammiges all next week. B)

Hmmmmmm...I think it might be time for a piece of pie and a glass of milk right now.  <_<

I copied this sauce from “The Godfather” movie.

”Clemenza’s sauce”.

Everybody seems to love it, and it’s very simple to make.

Olive oil, garlic, tomato paste, crushed and diced tomatoes, red wine, and “a pinch of sugar”! 😁

I add fresh basil just because I love the fresh, sweet flavor that it adds.

Nothing spicy.

My wife thinks mild taco sauce is too spicy. 🙄

My meatballs are half ground beef, half mild Italian sausage, crushed saltines, eggs, onion powder, garlic powder, dried basil and oregano, crushed red pepper flakes, Parmigiano Reggiano, salt and pepper.

Leftover penne pasta with mussels. One market makes this red sauce with mussels that is amazing, just add pasta. I can get 2 meals out of this.

And... turkey barley soup. I threw the carcass into water, got lots of good meat off it.

Leftover veggie platter carrots and celery, chicken broth and spices. Guess what ill be eating all week.

My daughter is quite the Cook. She has learned how to make Philippine style Fried Rice. She just sent some over. Awesome Stuff! Requires slightly different ingredients than the other kind, but 'Knock your Socks' off good.

One of my absolute favorites!

I do some pretty mean Thai Curry Mussels, if I do say so myself! 😊

That’s a pretty fine looking turkey! 😁

Plus all the trimmings.

Sausage apple stuffing, mashed potatoes and gravy, baked sweet potatoes, and creamed peas and carrots.

4th and final Thanksgiving dinner. Eess all gone now.  :D

I'll never understand people who don't like turkey, and people who don't like turkey-day leftovers.

Think I'll do ham for Christmas, then use those leftovers for a New Years Day spicy black-eyed pea stew.

Man, I can hardly wait to have a real kitchen again.

I did a 15 lb bird and 2 types of stuffing, regular and cornbread. Both were a mix with a 1/2 lb of sausage mixed in. Next time I will add more broth as they were a tad dry.

I gave my kids lots of leftovers to take home. The salad I made was too big, so that will keep me fed this week too.

The frame had some good meat on it, I still can make a few sandwiches out of it.

For Xmas I'm going with a fresh ham and a Spanish rice dish.
