I like Model Master Jet Exhaust from the military colors line. It's a medium metallic steel with a definite gold/bronze/brown tone to it. I haven't painted a carb any other color since I discovered it.

Carb color depends on era and carb you are modeling. The colors mentioned above are good choices, Also Tamiya Titanium Gold or Champagne Gold for a 60's era look (I use over silver base). Modern renditions (Resto-Mod or Pro-Touring for example) could have black, chrome or bright silver.

I've been using Testors gold, steel, or aluminum, depending on what appears to be more "right," and I'm happy with the results I get.

Is this the one (can't tell if it's from the military line or not)...

I mainly use Tamiya X-31 Titan Gold. It has just enough yellow-gold in it to be easily picked out in scale without looking like gold-colored bling. If I want a more subdued look I will use either Testors Acryl Jet Exhaust which has a darker, more brownish tone when applied to a small part like a carb. When applied to larger parts like wheels it looks more like the old Dow anti-oxidant poating applied to Halibrand magnesium wheels. For an even darker color, but with nice bronze metallic highlights I recommend Testors Metalizer Burnt Metal applied with a brush from the small jars and, after letting it dry overnight to cure, buffing it with a soft cloth.

Anyone tried Olive Green w/ just a touch of Gold?

Don't need to. I have Jet Exhaust.

I like to paint the whole carb with Tamiya metallic grey then spray a little puddle of stainless steel or aluminum plate metalizer and let it gas out a bit before I tamp it on to the high spots with my finger, then buff it out- the details just pop out

Sometimes I like to mix a little Tamiya clear orange with titanium gold and brush it on

Goes to show, some carbs are different colors. Carter AFB's / AVS's tend to be more on the aluminum side, whereas their Edelbrock counter parts are more toward chrome.

the Rochester (GM) branded carbs tended to have anodized finish which gives the gold-ish coloring, some Autolite did this also but the Ford 2-bbl and 4-bbl were usually just aluminum finish.

Here's what the Jet Exhaust looks like on carbs. Not the best pic in the world but the only one I have loaded up at this moment.
