Depends on the ethnicity!  Seriously, check out military colors, there you should find flesh colors for all regions of the world among the military color portfolio...

What is the best flesh color for painting figures?

Like was said, check the military section.  Don't worry about what it says on the tin, and don't be afraid to trust your eyes.

In today's all-encompassing world, there is no single (Caucasian) flesh color.  There is a whole range of flesh colors.  Not that there is anythign wrong with that. :)

This is Tamiya Flat Flesh XF-15 as a base, then mix of slightly darker and lighter shades to add shadow and highlights

That looks like the color I am after that’s on your figure.  I am painting some mechanics.

Humbrol still calls theirs "flesh".  I bought a tin of it a couple of weeks ago, to do a couple of Deal's Wheels figures...

I haven't done figures or people's faces, but I did see an article done on this subject. What I found interesting was the way the writer described the different tones and textures he used in painting the subjects face, arms, and hands. This was in a magazine that centered on mainly military subjects that I received instead of the car modeling magazine that I had subscribed too.

Personally, when I painted miniatures, I thought their light tan made a more convincing flesh colour.

So the right answer to "What is the best flesh colour paint?" is, there isn't one. Some variation is fine, and normal.

Personally, I think you should be very concerned if any part of your body took on the colour of most "flesh" paint.

Most of those colors should alert you that you have some very serious health issues.
