Leftovers !
Made a kind of shepherd's pie with leftover turkey and mashed potatoes. Made a roux with chopped onion. Added half and half and chicken broth. Chopped turkey and diced carrots. Because we are weird in California and my spouse doesn’t really like peas, a handful of shelled edamame was added. Into ramekins with mashed potatoes on top. Bake until it bloops, then broil to brown the mashed potato topping.
